What You Will Need

  • 1 cup oats (use gluten-free oats as required)
  • half cup dried apricot
  • dried coconut (unsweetened) to taste
  • one large ripe banana
  • maple or agave syrup to taste
  • 2 tbsp coconut oil
  • a pinch of vanilla extract

How To

  1. Break oats down slightly in a food processor (20 seconds)
  2. Gradually add all remaining ingredients until smooth
  3. Roll into balls and refrigerate until solid.
